LoL. Mending Touch is @ 3/4 cast time. Easy to interrupt? Well, it's not 1/4 cast, but it's still darn fast. A mesmer player MIGHT be able to catch this, but a ranger would be hard pressed to catch this cast time... Taking into account arrow flight time, and assuming it actually hits the target. Assuming the ranger is at point blank with the warrior, then MAYBE he can get it. But most do not have the reaction time of under 1 second... truely. A mesmer has direct/instant interrupt, so he would ACTUALLY have a chance at interrupting it, provided the player's reaction speed IS under 1 second.
Also, your comparison makes no sense. The AB NPC rangers have no interrupts; of course you can get away with it! NPC interrupt reaction is FAR superior to human interrupt reaction (assuming the NPC has an interrupt), in other words a human player is hardly ever gonne be stopping a 3/4 cast time compared to an Ai that can even get 1/4.
To OP:
As far as 1v1 your warrior vs ranger or necro, just take to heart what most have said here already... Stance break skill (Wild Blow) + Condition Removal vs Rangers... Hex removal vs Necros. People say Wild Blow ain't great? That's cause it is NOT a spam skill; use it wisely and only as you see stances activate. Hex removal + Self heals will own a curse necro (and knowing when NOT to attack). IMHO, a blood necro is the only thing you may have issue with... spike dmg, mass hex/degen stacking (degen) etc...
And if you have an elite slot open, try Crippling Slash, keep em from running too much =P. Just spam it to keep it on em...

I've interrupted skills like Healing Hands and Revearsal of Fortune hundreds of times, you take flight time in consideration?Yes, that's why when you inflict a condition, you immediatly know the Warrior is going to use Mending touch so you dshot it, catching him right in the middle of it.

Well, I didn't know Warriors had ranged attacks or spells, Ofcourse the ranger is going to be at point blank with the warrior, What the hell is the warrior using to hit the ranger, a staff?

I wasn't comparing, I was saying that the stupid builds 1vs1 warriors use might work against NPCs and PvE but not against serious PvP'ers.

EDIT: Oh and by the way, Crippling Slash is a terrible skill, also the worst thing he had to worry about isn't a blood necro, it's a Curses necro which not only does dmg like the blood but also shuts down, the only skill I see useful in a blood necro is Spoil Victor, unless you like to play scrub bloodspike.

Healing sig can outheal full degen, and you can control yourself how much damage you take from spiteful spirit and price of failure and heal inbetween the attacks, so a curse necro can only bring a stalemate in a 1 on 1, not kill.
Blood and death necros can do more damage since they have direct damage, but they don't have shutdown so there isn't really a way to counter them, just hope you can kill them before they kill you... "You're All Alone!" is useful for that. Veil and expel are best for hex removal against the necro IMO, with remove hex, hex breaker etc you just remove parasitic bond.
How to avoid getting your <1s casts interrupted by ranger: make the timing of the casts less obvious, for example occasionally stop a short while before activating.
